Natural (Dry) Coffee Processing


The natural, or dry, processing method is one of the oldest. Harvested coffee cherries are dried whole under the sun, spread out in thin layers on special drying beds. Regular turning ensures even drying, which can take up to four weeks. Once the desired moisture level is reached, the pulp and skin are mechanically removed, leaving the beans.

Washed (Wet) Coffee Processing


The washed, or wet, method involves removing the pulp immediately after harvesting using specialized equipment (depulpers). The beans are then fermented in water to remove the remaining mucilage, after which they are washed and dried. This method gives coffee a clean taste, bright acidity, and a well-defined aroma.

Honey (Semi-Dry) Coffee Processing


The honey method combines elements of natural and washed processing. After the skin is removed, part of the mucilage is left on the bean, which is then dried with the sticky layer intact. This method gives the beans a sweeter taste and fuller body, making it popular among coffee enthusiasts who appreciate vibrant and complex profiles.
